Spiced Chickpea Salad
Serves 3-4
This salad is quick and super tasty. The flavour gets better as it sits in the fridge, where it can live nicely for a couple of days in a sealed container. Serve with a wholemeal pitta bread for lunch or with a grilled chicken breast for dinner! It is also great with any lamb dish. Very handy to bring as a packed lunch.
INGREDIENTS
400g tin of chickpeas
Large carrot diced quite small
1 medium red onion finely chopped
2 tsp ground cumin (more to taste if you love cumin)
Juice of ½ lemon
Large handful of chopped fresh mint (add more if you love mint!)
Half tub of natural yoghurt
1-2 tbsp mango chutney (I try to buy the slightly less processed/more authentic ones with less sugar content)
Freshly ground salt and pepper
METHOD
Mix the yogurt with the mango chutney in a bowl along with the spices.
Mix everything else together then add together with the yoghurt dressing mix.
