Spiced Chickpea Salad

Serves 3-4

This salad is quick and super tasty. The flavour gets better as it sits in the fridge, where it can live nicely for a couple of days in a sealed container.  Serve with a wholemeal pitta bread for lunch or with a grilled chicken breast for dinner! It is also great with any lamb dish. Very handy to bring as a packed lunch.

INGREDIENTS

  • 400g tin of chickpeas

  •  Large carrot diced quite small

  • 1 medium red onion finely chopped

  • 2 tsp ground cumin (more to taste if you love cumin)

  • Juice of ½ lemon

  • Large handful of chopped fresh mint (add more if you love mint!)

  • Half tub of natural yoghurt

  • 1-2 tbsp mango chutney (I try to buy the slightly less processed/more authentic ones with less sugar content)

  • Freshly ground salt and pepper

METHOD

  1. Mix the yogurt with the mango chutney in a bowl along with the spices.

  2. Mix everything else together then add together with the yoghurt dressing mix.

  3. Enjoy!
